Ethiopia Alo Safo Station Natural 74158
Located in the Bensa district of Sidama, Alo Safo Main Station sits at an elevation of 2,480-2,550 masl, where cool temperatures and nutrient-rich soils create ideal conditions for slow cherry maturation and exceptional cup quality. The station works with hundreds of local smallholder farmers cultivating improved Ethiopian landrace selections, including 74158.
Only fully ripe cherries are handpicked and delivered to the station, where they undergo multiple rounds of hand-sorting and flotation to remove underripe or defective fruit. The selected cherries are then spread in thin layers on raised African drying beds and carefully dried for 20-30 days. During drying, the cherries are turned regularly throughout the day and protected from excessive heat and overnight moisture to ensure slow, even dehydration. This meticulous natural process preserves the coffee's vibrant fruit character while producing remarkable clarity, sweetness and a refined elegant cup.
Coffees are roasted every Sunday and shipped on Monday.
