We were curious how different varieties of the same fruit could express themselves, so we started a simple blind tasting.
Each one has their own character expressed through aroma, acidity, sweetness, texture and aftertaste.
A simple exercise to better understand how we talk about flavour in coffee.
Here’s what we found:

Royal Gala
Sweet and refreshing upfront with low acidity. Subtle woody notes on the finish, crisp texture and a juicy, clean aftertaste.
Pink Lady
Punchy acidity at the start, with deep, layered flavours. Herbaceous and floral, with hints of baked apple. Rounded acidity, clean finish and a crunchy texture.
Fuji
Highly aromatic on the nose. Soft, balanced profile with medium sweetness and acidity. Leaves a vibrant lingering aroma with a slightly sandy texture.
Bravo
Vibrant and expressive. Floral sweetness reminiscent of lychee, with a touch of savoury and dark herbal notes. Sweetness builds over time, finishing with a slight astringency.
Rocket
High sweetness and low acidity. Honey like, reminds us of sweet mandarin. Soft and slightly muted profile.
Green Apple
Sharp, sour and savoury. High acidity with a lingering, mouthwatering finish. Noticeable astringency and an ultra crunchy texture.
