Yunnan Gesha Cascara
Cascara is the dried fruit of the coffee cherry, separated from the coffee seed during processing.
This Cascara comes from Gesha coffee cherries grown in Baoshan, Yunnan. In recent years, more farms in Yunnan have started experimenting with Gesha, and the quality of the fruit has become increasingly interesting.
The cherries are picked fully ripe and carefully processed before being naturally dried on raised beds. The Cascara is not roasted, keeping the natural character of the fruit.
Compared with Catimor, Gesha Cascara has a sweeter and more expressive fruit character. In the cup you can expect notes of rosehip, hibiscus, cherry, red currant and mango with a light floral sweetness.
It sits somewhere between coffee and tea but it tastes much more like a fruit infusion than coffee.

Recipe
Hot
7g cascara to 210ml boiling water.
Steep for 5-10 minutes, able to be brewed multiple times.
Cold
25g cascara to 1000ml cold water.
Leave to steep overnight in the fridge.
