Fresh flower scenting is a process that explores the interaction between coffee and natural floral aromatics. Inspired by the traditional jasmine tea scenting technique, fresh jasmine flowers are layered with green coffee beans, allowing the beans to absorb the flowers' volatile aromatic compounds.
The process begins with the careful harvesting and conditioning of fresh flower buds. As the flowers bloom and release their fragrance, they are layered with green coffee beans in carefully managed piles. Temperature, time, airflow and pile conditions are closely monitored to encourage aromatic transfer while preserving the integrity of the coffee.
After scenting, the flowers are separated from the beans, which are then sorted and dried according to their condition. The cycle can be repeated to explore different levels of aromatic intensity.
Rather than relying on added flavourings, this technique explores how the natural aroma of fresh flowers can interact with coffee, creating new possibilities for floral expression and sensory exploration.
