This coffee is thermalshock fermented honey process. After the ripe cherries are carefully sorted, temperature changes are used to control the fermentation process and its pace. Some of the fruit mucilage is then retained during drying. The goal is to preserve the sweetness and body associated with honey processing while avoiding excessive stickiness or a loss of flavours.
